The waves were done using butter-cream in 3 different hues of blue in a scallop technique. The surfboards and beach towel were made of marshmallow fondant and were each hand painted. I also painted details on the backpack, flip flops, sand castle, and beach tools that were also on the top. I used purchased chocolate shells and a cocktail umbrella to finish out the look. The top tier was gluten free chocolate cake and was filled and frosted with a mocha flavored butter-cream while the bottom tier was funfetti and was filled and frosted with french vanilla flavored butter-cream. Besides the chocolate shells, cocktail umbrella, and cake mixes, all components were made from scratch. What are you most proud of? I am very proud of the painted surfboards. While I did not have enough time to put as much detail as I wanted in them, and a couple were dropped repeatedly, I learned a lot about the hand-painting techniques in doing them, which is always important in my world. Also, my daughter absolutely loved them and since it was her cake, that is what was the most important thing. What advice would you give someone starting this project? Start far in advance. I usually begin planning my cakes at least a month in advance, because something ALWAYS comes up. For this cake, I only had about a week to plan and execute it, and that was nowhere near enough time for the painting and everything else to turn out the best. I got 2 hours of sleep the night before in order that she have a completed cake.
