Her only instructions were that the shade of blue had to be quite soft, not too bright. I made the roses my own way (and she later remarked that she preferred my style to the original pic she gave me) and otherwise followed Jessica Harris' instructions as to getting the smooth and clean finish on the cakes. The cake was to serve 130 and I think I may have overcatered. My first time setting up at a venue, which was a bit scary for me, but I'm glad that it still looked clean in the end. Top tier caramel mudcake, middle tier a 3 kg fruit cake and marzipan, bottom tier choc/vanilla marble cake. What are you most proud of? The clean finish, though I wish I had had time to make more or larger roses. What advice would you give someone starting this project? I struggled with covering the fruitcake. I plugged holes with marzipan but still didn't find it to be very smooth. I ended up covering the cake with a very thin layer of buttercream (leftover from one of the other tiers) and then covering that with marzipan, and then covering the marzipan with fondant for a smoother finish. It took a lot longer than I would've liked.
