Gumpaste Cabbage Roses, Fondant ruffles. What are you most proud of? Learning to make the cabbage rose. I had a serious accident 3 months ago and lost the tip of my index finger. I was not sure I would be able to do cakes after that. So lucky and so happy that I can still do what I love to do. What advice would you give someone starting this project? Make your roses ahead. Decide on a color pallet before starting your project, color your fondant the day before so nothing slows you down once you start the ruffles. Then just have fun with it.
