Share a little about the materials, processes, and techniques used to create this cake Both cakes are lemon covered in white MMF with black modelling chocolate decorations. The top cake is crumb coated with white chocolate ganache & the bottom one is crumb coated with SMBC. What are you most proud of? The horizontal stripes - the wax paper technique worked like a dream! The music notes round the cake play out the first two lines of 'Happy Birthday To You'. What advice would you give someone starting this project? Avoid white chocolate ganache!!! It was a nightmare to work with, I just couldn't get the consistency right. I nearly threw away the top tier as the crumb coat was so bad, but covered it with MMF anyway just to practise and it didn't look too bad. But I will definitely stick with dark chocolate for ganache in future!
