Minnie Mouse 1st Birthday Cake

Project Description

Share a little about the materials, processes, and techniques used to create this cake 7" and 9" cakes, white chocolate ganache, coconut buttercream, fondant, modelling chocolate, sugar pearls What are you most proud of? Am really happy with how smooth and clean the sides are (could do better with the corners, but baby steps!) and how easily and cleanly the wax paper technique worked on the middle band of the top tier, I loved that I was able to lift the band with the inlaid polka dots without worrying about distortion/stretching. I'm also getting more confident with flipping the cakes upside down (first time was very scary!!). The bow and flowers were made with modelling chocolate/fondant mixes and the pink fondant and modelling choc was made myself using Jessica's recipes! So easy and it tastes so much better than the shop stuff (and it's cheaper too). Thank you so much Jessica for such an amazing class - I've learned so much! What advice would you give someone starting this project? The shortening I have here is 'copha' which is a very hard solid at room temperature. I melted it with the intention of using it as glue but as I had to slightly freeze the black fondant to get it to firm up in order to cut it, when I painted the melted copha on the band, it resolidified almost instantly! My advice is, if you're going to freeze the fondant, forget about using copha as glue! haha
