Not a single piece of cake was sculpted with a knife. A thick (1/2") coat of buttercream underneath a thicker than usual coat of fondant (1/4") was used. Then the facial features were sculpted into the fondant by manipulating the underlying buttercream with my hands. Your hands and fingers are the best tools that you have. Don't be afraid to use them.
