She sent me photographs of cakes she liked. They were loaded with stenciling. I have done some stenciling before but hated it because after the first application the remaining would be messy and eeek! No very good. It was my good fortune that the same week I met with the bride Craftsy posted Allan's stenciling class. I immediately took it. The tip of washing clean the stencil after each application was the most valuable part of the class because that was the reason my applications were messy. I covered each cake with a very thin layer of buttercream and made a paste of trimmed cake, buttercream and the syrup to cover the cake before apply fondant. Only one tier I covered with chocolate ganache. I found the tiers with the spackle paste did not have as many air pockets like the ganache tier. I made each tier dry completely, another good tip from Allan, before applying the Royal icing to stencil. I used another good tip of applying a good amount of Royal icing and it made me avoid repeat application of the icing. I can't wait to do another stenciling of a cake. The top tier I covered with the silver foil, Jessica used on one of her Clean and Simple cakes. That was the most frustrating part of the decorating because each time I exhaled the thin piece of silver blew in the air and stuck to something or my finger!!!. I found that if I gingerly apply the silver while it was on the paper I would get it attached to the fondant a whole lot better. The peonies I used some of the techniques taught by Colette and Nicholas as well as mine. I airbrushed them in a mixture of pinks, but my airbrush got clogged up and I did not have the time to fix it so I finished with Wilton sprays. The bride was very happy with her cake, she called me the next day. In the end it was one of those cakes I felt very good about doing. Thanks to my Craftsy classes which helped me.
