The lettuce leaves came out pretty well I thought. It took me a couple of tries but after I figured out how to create my green modeling chocolate and shape it into a log, then I rolled a thin rolled section of white chocolate and wrapped it around the edge, that way I was able to roll it out and press the veining into it - and it actually looked a little real! yay! What advice would you give someone starting this project? take your time and keep a small fan beside you while working with the modeling chocolate. I found that making the broccoli florets became a little difficult with the heat of my hands. So, if you have a small fan to put beside you, you can shape the florets and set them in front of the fan to quickly set. As for the butchers block, I used various shades of brown, cream, beige gel fondant colors to streak through the fondant, rolled into a log and stretched, pulling long, and folded over and pushed back together, rolled, stretched, fold. Just make sure you don't blend it together to much. If all works you'll create the look of wood grain. Roll it out to a thick flat section of fondant, cut it into squares and place back together turning the grain this way and that way up against each other, roll them out together to thin it out for covering your cake and wall-a, a butcherblock looking cake!
