Ganache cake with berries/peonies

Project Description

Do you sell this cake? Yes Name of website or online shop Sweet and Swanky Cakes, LLC Link to website or online shop http://sweetandswankycakes.com/ Share a little about the materials, processes, and techniques used to create this cake I followed Maggie's instructions to the tee, and was so pleased with the results, as was the bride. I used my homemade marshmallow fondant for the ruffles (which I learned from her ruffle class), chocolate ganache, gumpaste, and everything Maggie suggested in her class. It was VERY time consuming but so worth the effort. I love how detailed Maggie's classes are and I'm so happy I took the class! What are you most proud of? I'm most proud of how natural and detailed the sugar work turned out, and how the ganache looks like wood. What advice would you give someone starting this project? Start early! Be patient (there are over 1,000 of those little rounds). Follow Maggie's instructions! xoxo

Q&A with Sonja McLean

CDodd12 asked:
How on earth did u get the ganache to look like wood? The cake is amazing! Great job!
Sonja McLean answered:
Thank you dear! I ganache my tiers the way that Erin S. does from Three Little Blackbirds (video is on You Tube), and during the smoothing process with the hot knife, it will change the shade of brown with the ganache. I do that process a couple of times for variation. :) xoxo
Lola Marti Cake asked:
Wowww beautifull
Sonja McLean answered:
Thank you so much!
fanny fondant asked:
So fantastic! Were there any problems with the ganache becoming soft when it was on display?
Sonja McLean answered:
Thank you! It was cool outside and in November so I did not have any issues. Summer time would have been a different story, lol!
pamz9 asked:

Belinda Lim Williams asked:
I goggle but there is no tutorial regarding the wood effect, is it u ganache both white and dark chocolate at the same time?
Sonja McLean answered:
It's just chocolate ganache done in layers :)
