I was very happy with the ruffled heart which I made using the ruffling techniques Maggie shows in her course. What advice would you give someone starting this project? Maggie Austin kindly suggested that since I do not have a pasta machine to just roll the ruffles as thinly as I could. This was a practice cake and came out O.K. but I think the pasta machine would achieve a much better result. Also made the mistake of making the ruffles a bit narrow - I was thinking since it was just a four inch cake I should scale down the depth of the ruffles! I should have made them the same as Maggie instructed, but it was a good exercise at least in preparing the ombre effect!
