Second tier was a creme brulee cake with a vanilla/caramel custard filling. Bottom tier was chocolate fudge cake with brown sugar syrup buttercream filling. The cake was covered in Ivory colored, brown sugar syrup buttercream. Decorations were oatmeal and lavender colored raffia and white daises. To get the icing perfectly smooth I used a recipe inspired by Sharon Zambito, but I use all butter and no shortening. If there were small air pockets, then I use #2 tip to fill in the holes and then use a spatula dipped in very hot water and wiped dry to smooth out the buttercream. After it has crusted I also use the Viva paper towel and fondant smoother method, to further smooth it. I also made a small miniature branding iron to lay beside the cake using wooden dowel rods, straws and aluminum foil painted black What are you most proud of? How smooth I got the buttercream.
