What are you most proud of? I'm extremely proud of my gum paste mask, but in all honesty I'm most proud of how the Modern Buttercream turned out...on and off of the cake. It complimented my amazing Red Velvet, more perfect than I had imagined. What advice would you give someone starting this project? Patience....because it can be frustrating when your cake is extremely cold and the buttercream is hardening almost as fast as you put it on. I'm sure with more experience it would be just a walk in the park. I'm self taught, and my clients and the Fundraisers that I donate to, are extremely pleased with my work....visually and by taste. I tweeked the Modern Buttercream to better suit my tastes, and I suggest that if you are comfortable to do so...do it. It makes it more personal. I try to put a little bit of me into everything I make. Oh....and have FUN....isn't that what it's all about?
