Here we mixed them with Vanilla Swiss Meringue Buttercream, formed them into "truffle" shapes, coat them in bittersweet chocolate, and dust them with cocoa powder. For this client's Birthday, we decorated with Meringue Hydrangeas that I had saved from another cake order. When I make Meringue Flowers (in most any shape & color) I always make extras, as they come in very handy for other projects; and people love the fact they are indeed Meringue!
