However, I can tell you I have used 3 techniques for the roses, one, as I mentioned before is from the course Basic Fondant Techniques of Elisa Strauss and the other technique is from the course of chef Nicolas Lodge - The ultimate sugar rose. Free hand roses is a technique I found in facebook tutorials. Hope this can help.
