Q&A with Alicia P.

Nancie McDermott asked:
First, I commend you on this lovely and deliciously irresistible pie. Gorgeousness of crust and filling. I know it was loved and devoured with delight. Second: I know of no way to stop the juices from flowing other than to cut down on their source, which is sugar and juicy berries. And they are the heart of the pie. A whole pastry top will capture juices better than the lattice but what a joy to see the filling and enjoy the design. I consider the juice worth it for the lattice lovliness. But it is a mess in your oven and that is not fun. Placing the piepan on a sheet pan or cookie sheet keeps the juices from going onto the oven and burning there. You could also line the pan with parchment paper or waxed paper or foil, so that juices will stick there and maybe even burn but not create a problem for you in clean up. What do you think?
Alicia P. answered:
Those are great tips. Sticky goo in the bottom of the oven is no fun! This pie was absolutely delicious. I had no idea what rhubarb could do for a strawberry pie. Now I wouldn't make one without it. I love the tanginess mixed with the sweet strawberries. Thank you so much!
