Poached Pear & Almond Cream Tart

Share a little about the ingredients and techniques used to create this dish/item. I used grape juice instead of adding alcohol. What advice would you give someone starting this project? If you don't have sliced almonds here is a trick I learned from mom... Take a handful of almonds and put in microwave safe bowl covered with water. Heat on high for about 30 seconds or until skin slips off. Then slice and roast in oven for about 15 minutes.
