Project

French Country Sourdough Miche

I followed the instructions in Peter Reinhart's class on Artisan Bread Making: Ancient & Sprouted Grains. This was a challenging bread since I had never used sourdough before. The sourdough starter was very active so it did not take long to ferment and proof. The photos are: 1) after dividing and shaping the dough, placed into the bannetons for proofing. 2) After proofing and slashing with lame, prior to baking 3) fresh out of the oven 4) first slice showing crumb
