Share a little about the ingredients and techniques used to create this dish/item. Greek Christmas bread from Peter's excellent book, The Bread Baker's Apprentice. This is the Christopsomos variant with orange/honey glaze. For fruit, I used golden raisins and dried cranberries. This bread can be made with poolish or barm (sourdough starter) - this particular bread is made with barm. You cannot believe how fantastic the house smells with this bread is baking!
