How Olivia's Bakery came about. Once upon a time ... This story begins as any good story does. It started when I was planning on baking a special cake for my brother's first wedding anniversary. Mulling over my family's preferences of flavours and ingredients I realised that my brother'?s little niece would be there as well. She was usually given an ice lolly whilst the rest of us enjoyed gluten and lactose filled desserts. From that moment on I embarked on my gluten-free mission. Initially I set out to try and make this cute little girl happy. So I started baking, and tasting, and ... throwing the results in the bin! So many attempts went from the oven straight into the bin after tasting just a mouthful. After a lot of hard work and numerous failures, whilst gaining knowledge and experience along the way, I discovered a concept that even people without celiac disease find delicious. My quest to come up with a tasty and wonderful alternative was rewarded and the journey was well worth it! Step by step I changed from a no nonsense civil engineer into the sensitive gluten-free baker I am today. Initially I set out to make a little girl and others happy but to my surprise I found myself faced with certain health issues as well. The fact that I suffer from several food intolerances has helped me to have an even better understanding of my customers and has made me more determined to continue on this chosen path. What started out as a brave experiment has led to a successful company with an unassailable goal; to make sensitive customers happy with nutritious and delicious products that taste as good as they look. ... and they lived happily ever after ... gluten-free.
