I was thrilled to learn how to make the ruffles in the Jeweled Wedding Cake course. I had booked this Sweet 16 cake with a customer before I took Marina's class. You can imagine how happy I was to see Marina make the ruffles! I used red fondant and strengthened it with tylose powder. It worked well, but you can't roll it as thin as you can true gumpaste. But since I had to edge each one in silver, the thicker edge was better. They did dry quickly. The ruffles are attached to cake dummies which were obviously used to separate the tiers of real cake. The cake was vanilla filled with raspberry mousse, fresh raspberries and lemon cloud cream.
