Ingredients
3 cups (approximately) whole-wheat flour
1 1/2 teaspoons salt
1 tsp honey
1 packet yeast (2 1/4 tsp)
1 1/2 cups water
2 tablespoons olive or vegetable oil
Put yeast and honey in 1/4 c of warm water and stir to moisten. Allow about 10 minutes to begin bubbling then place in large bowl with the rest of the water, oil, and salt. Add 1 cup of flour 1/2 cup at a time and beat with a wire whisk. Add another 1/2 cup of flour and mix with a wooden spoon until smooth. You may need to add more flour to make a dough that pulls together into a ball and is not too sticky to knead. Put dough onto a clean, lightly floured surface. Knead for about 5- 8 minutes adding more flour as needed. Dough should be soft but not sticky. Cover dough and place in a warm place to double in bulk (about 50 minutes - 1 hour). Punch down and cut into 8 - 12 pieces (depending on how large you want your pitas to be). Roll each pita into a circle just under 1/4 inch thick and put on a lightly floured surface to rise. Place in a warm area and cover with a lightly dampened towel. Pitas should begin to rise in about 40 minutes. Put a baking stone or upside down cookie tray into the oven; heat to 450degrees. Place as many pitas as you can on your baking surface. Bake for 3 - 4 minutes or until lightly browned and puffed. Cool and wrap. They freeze very nicely.

What was your inspiration?
My husband is diabetic and we have a hard time finding 100% whole-wheat bread for him. This recipe is all whole- grain and only a single teaspoon of honey is used. It's also very, very good!
