What advice would you give someone starting this project?

Have fun with the dough! It's the hand kneading that makes it taste so good.

Hopefully with the amt of flour it should be a wonderful bread , the recipe I am currently using is too soft ( 4 cups ) and I will try the hands on for a change . Even with a kitchen aide the amt would have to split in half , so nice stress reliever . Thanx

I'm strictly an old fashioned hands on bread baker so I've never tried it with a mixer, butI don't know why it shouldn't be fine.

Ah, French bread! What beautiful loaves! Pure evil. (I'm diabetic.) I'm into bread baking, too, but these days usually make rye since it is slightly less evil. LOL. With my carb restriction, I can only have about half a normal slice at a time. Gone are the days when I'd be able to down three slices with butter while it was still hot from the oven. Ah, wonderful memories, though.

I know what you mean about missing the days gone by. Since my husband was diagnosed with diabetes a bit over year ago I haven't baked this lovely bread either. Rye is my favorite, but not his, so I've been making lots of whole wheat breads and whole wheat desserts.

Thanks so much for this recipe. I love it!! and so does my family. :) I make homemade bread often and I am so happy that I found this recipe. I did add some italian seasoning and garlic powder to the dough and shaped them into sandwich size rolls. I used them to make homemade meatball sandwiches with sauce and mozzarella. My family absolutely loved them. Since they were smaller in size, they only needed to bake for about 20 mins. total. I put the water tray in as your instruction said, but only for the first 12 mins. then I reduced temp and baked the additional 10 or so minutes. This recipe will make eight or nine 6-7" rolls

Bread making tips: It's really hard to get bread just right unless you've had lots of experience with handling dough, so if you don't do bread often the instructions may seem vague. That's because describing texture is pretty much impossible. The first area where people are most likely to make a mistake is in getting the flour just right. So many factors influence how much you'll need on a given day. The dough needs to be soft, but not overly sticky. You can keep adding bits of flour as you need, just enough to keep it from clinging too much to your hands. Kneading is important too. The texture of the dough does change when it's ready, but the change is so subtle. On my recipe 6 minutes of hand kneading has been just about right for me. Then, not all ovens are the same and temperatures can vary quite a bit. It's better to check the bread a few minutes early than to chance it getting overdone and all crust. My guess is that your oven may have been a bit warmer than optimum. Good luck with this. Do let me know if you have any problems at all. :)

I've baked tons of bread in my day...90% sour dough bread. That is why I was so surprised and let down when my frency bread loaves were hard on the outside. I kneaded it forever. Next time I think I will use the dough hook on my mixer but I LOVE LOVE LOVE kneading bread.... I think its good therapy,... for something. LOL

I just now tried to send it to you, but there was a problem with your email adress. I wonder if you have some really strong safeguards on it. This may help though. Once you put a pattern in your cart you need to add it to your library. There's a button to click for that. Then you go to your library and click on "download PDF" which appears at the top of the pattern. Let me know how it goes. Absolutely, I miss both, he was 34 yrs older that myself, but we never felt that difference of ages, As a good French gentleman (engineer), He was good in everything He did, cooking, pastries, He spoiled me so bad, Took me breakfast to bed, for the few years we were married, cook all my meals and a sweet desert daily, Sure it was amazing.

Oh I love making my own bread !! I love the feel of the dough when I'm kneading it, I love the smell of the yeast, everything about it is just wonderful,,,especially when its in the oven and the whole house smells like bread. And then...you get to pop the warm stuff in your mouth with that crust just perfectly done. Nothing like it.
