White whole wheat can be substituted 1-1 for whole wheat flour. It is simply a different variety than 'red' whole wheat that we're all used to. It does seem to absorb water differently so be prepared to adjust, but otherwise you can just substitute it. This particular loaf was made with the whole wheat recipe in Chef Reinhart's "Artisan Bread Every Day". My usual hideous shaping mistakes.Difficulty:

What was your inspiration?
I find that I usually like using this flour more than red whole wheat. I can't quite figure out why it hasn't "taken over", but it must be gaining popularity because it is in most of the grocery stores now, if they have King Arthur.
What are you most proud of?
Not this one. I measured the wrong amount of water and had to scramble to fix it.
What advice would you give someone starting this project?
Just pretend it is whole wheat, because it is, just a different variety. It is not whole wheat that has been bleached or anything like that.
