Instructions
Watch the class through once and then work with Nicholas. I had made about a dozen roses with commercial flower paste before I tried Nicholas' recipe but I discarded them once I used it. The instructions are so beautifully clear and precise and I can't tell you how beautiful Nicholas' paste is to work with!I'm so glad I took this course; give it a try and you'll never look back!

Materials
Nicholas Lodge's gorgeous flower paste recipe, toothpicks and pearls for the roses. The cake is red velvet with vanilla bean cream cheese (bottom tier), chocolate with salted caramel buttercream (middle tier) and lemon with lemon cream cheese (top tier)
What was your inspiration?
The Bride wanted a romantic cake in navy and ivory. I suggested incorporating her bridal flowers and jewellery and had begun before I saw this class; I'm glad I did! My roses were always 'alright' but I'm a thousand times more confident now.
What are you most proud of?
I'm glad I tried Nicholas' technique of making one of each of the six stages of the rose; from tight bud to full bloom. I've made roses before, for Communion cakes, etc but this technique worked so beautifully for this cake.
If I have one regret, it's that I made my leaves rather flat, instead of having them curl realistically against the cake. Next time... :)
What advice would you give someone starting this project?
Dont hesitate to try it! You'll surprise yourself! My roses aren't nearly as good as they can be with practice but I now have an excellent flower paste recipe and techique to work with. I'm lookig forward to buying as many classes as the peerless Nicholas Lodge will record! Happy rose making! :)
