Start at least a week or more in advance preparing yourself.Sketch your final design, figure out what items you may need to still purchase - online gets you a better assortment even though shipping costs will apply.
Get your board, poles and cake drums prepared ahead of time. I used 4 rubber door stoppers for the feet of the cake board they worked great.

What was your inspiration?
I've been wanting to make a topsy turvy cake for some time now. With the online class it gave me a better understanding of how a sturdy constructed cake can be made. I love the idea of it looking like it's going to tip over!!
What are you most proud of?
The 18 year old graduate was so excited when I brought it to her - she loved it!
I love to see the faces of people when the get one of my creations - its priceless!!
What advice would you give someone starting this project?
Best advice - don't wait until the last minute!
Be patient with yourself and expect the unexpected.
Make sketches of your final project, it really helps you prepare.
Prepare the cake, icing, fondant & gum paste even a week before it's needed - just be sure to store the food properly (freeze, vacuum seal, etc).
Make the gumpaste items in advance so they will dry throughly and always make extras.
Always be prepared to alter your design due to unforeseen circumstances (as I had to in this cake).
