What are you most proud of? The pale pink rose in the back

What advice would you give someone starting this project? Sugar is not an easy medium to work with - it is very hot and when it cools it breaks like glass. When you see chefs on TV cry (or almost cry) when their sugar sculptures break - that's real. But when it works it is really beautiful not quite like anything else.
