Share a little about the materials, processes and techniques used to create this cake: So I have baked many cakes for birthdays before and there's always something wrong with them, they brake or taste funny, etc. but I have finally found the perfect sponge cake recipe that is perfect for moulding as the cake is quite firm. If you want the recipe I will add it to the bottom. I also found that sieving the flour is important you really do notice the difference. I don't have an electric mixer yet so I used good old fashioned elbow grease mixing for 15-20mins. Then when it was cooked I let it cool completely before adding vanilla buttercream and strawberry jam for the filling then I put it in the fridge overnight but a few hours would do. Then I covered the whole cake in strawberry buttercream and decorated with chocolate piping. I put it back into the fridge for an hour just so the words don't run. And voila a birthday cake! 8in circle cake tin 340g self raising flour 280g caster sugar 280g butter (softened) 5 eggs 3 tablespoons milk (optional) vanilla extract. Pre-heat oven to 150c/gas mark 2. Sieve flour into a bowl add all the other ingredients and mix with an electric mixer on slow until all the ingredients are blended and then on high for 2 minutes. If your mixing by hand mix vigorously for 15-20mins until batter is thick and smooth. Bake for about 1hr 15mins or until golden. Leave to cool then decorate! Have fun I hope you enjoy!
