I have been using a sourdough start that a neighbor gave me for the past eight years. I am trying to expand on the techniques I learned over those years with the new techniques from the Craftsy Artisan Bread course.

It is still delicious, but I love that pattern I learned from using the banneton for proofing

What advice would you give someone starting this project?

Bread making is a delicious hobby

Thank you. I have finally been consistently getting the crumb the way I have been hoping... but just this week! I am finding that if I mix the dough by hand and ferment for very long periods, I get better crumb results.
