What are you most proud of? It is still delicious, but I love that pattern I learned from using the banneton for proofing

Thank you. I have finally been consistently getting the crumb the way I have been hoping... but just this week! I am finding that if I mix the dough by hand and ferment for very long periods, I get better crumb results.
