What advice would you give someone starting this project? Once you get in a bread making rhythm it's easy to fit into a busy lifestyle.

How did you get the big holes? My sourdough is very dense, and I can only get those if I add commercial yeast.

I feed my Levain just prior to making my preferment. I use a 100% hydration Levain and I test that a piece floats in water prior to use, if not, I feed it again. I'll send you my recipe if you feel like leaving your email:)
