Banneton and Baker's Couche

What was your inspiration?

Wanted to use new baking tools and see if they were of value. Also wanted to adapt Peter's stretch and fold technique to sourdough.

What are you most proud of?

Crumb and taste and tools make a difference. Also adapting S&F to make a better sourdough!

What advice would you give someone starting this project?

Don't make 6 loaves in one day! Starter grows and grows!

I used two differnet recipes. One from King Arthur Flour which you can find at this link. http://www.kingarthurflour.com/recipes/rustic-sourdough-bread-recipe The other was from Nick Malgieri's new book, Bread. Recipe is found on page 130, French-Style Sourdough Bread.
