All figurines are hand sculpted out of gumpaste, the "snow globe" topper is sitting on coreboard cut the same size as the opening of the bowl. Spritz the inside of the bowl with everclear or vodka and sprinkle sparingly with edible flakes or sugar - don't over-do it, you want to be able to see whats inside!!
I then sqeezed royal icing onto the coreboard to the edges (making it look fluffy like snow). Then place your figures into the royal icing, then carefully place the globe on top. The royal icing will secure the globe & figurines in place. Set aside to harden the RI.
Pipe a bunch of stars out of royal icing and let harden. I made RI snowflakes also but must've used too small an icing tip as they all broke apart when I tried to pick them up - so the snowflakes are piped directly onto the cake.
I decided not to cover the entire cake with fondant. The bottom half is airbrushed icing & the top half is fondant with royal icing piped around the cut scallops. Then a hardened RI star was placed at the points.
For the penguin figurines i did not blend color into my gumpaste. To get a good true black you have to use way too much food coloring. So I decided to paint them with gel food coloring instead.
