I made 4-9x13 white sheet cakes, I cooled them and split 3 of them. I made a ricotta canoli filling with mini chocolate chips. I layered up 2- side by side- and then added another layer to each (now making them 3 layers high) the fourth layer was cut into 2 1/2" strips and applied to the outer edge along the top. I then frosted with butter cream and placed into the cooler for it to set up. I then proceeded to make up one canister at a time of gum paste. Using Wiltons directions for dyeing I turned it chocolate in color. I cut pieces and applied to the sides first, then the top. I took smaller pieces and applied them to the corners and inprinted them with notches before hand. I then made up more gum paste as needed. I made up another batch and turned it teal for the inset part of the cake. For depth and dimention I took cocoa powder and vodka and brushed the gumpaste with powdered cocoa and made a wood grain effect on the cake. It also made it glossy. I then took 8 rice crispy treats and molded (by hand) to resemble a small gun. I then made more gum paste and rolled it flat, covering the rice crispy gun. I took bamboo skewers and etched in a design. I purchased ediable silver powder and mixed with Vodka (more like dipped brush into vodka and then into silver) I brushed onto front of gun to give it a metalic appearence and then brushed again into the scrolls to build up antiqued effect. What was your inspiration?
I was asked by my friend to make a "Cassatta Cake" for her husbands surprise 40th, and his favorite/prize possession is this gun which was owned by his grandfather, for whom he is named after. he keeps it in a flet lined box so the cake was made to represent that.
What are you most proud of?
I was able to work with gum paste and turn it into wood using cocoa powder and vodka.
What advice would you give someone starting this project?
Take your time and practice with the gum paste. Once you get it down to where you feel comfortable, you'll find you use it on everything!! It's great for making flowers too!
