Materials

This was a cake for a Nurse retiring after 35 years service to her community. There are 2 flavours in the cake, one, the top tier is 4 layers of Sweet Lemon cake with buttercream frosting between each layer. The bottom tier is also 4 layers with buttercream frosting between each layer and is Fudge Marble cake. The top tier is covered with Vanilla Fondant and decorated with a Silver Satin Ribbon & a Blingy Buckle. The bottom tier is covered with Silver Buttercream in a Ruffle Design then sprayed with Silver Edible Pearl Spary.

What was your inspiration?

I wanted something elegant, as was this wonderful lady. The ruffles sprayed with the silver pearl spray made them appear softer.,

What are you most proud of?

The whole cake turned out with what both the client & I had in mind. We wanted to honour this fabulous lady with a fabulous cake.

What advice would you give someone starting this project?

The Ruffles were easier than I thougth they would be to apply. A good crumb coat is the key. Wilton Tip 125 was the tip I used, but any size similar would do. Work bottom to top. Hold the wider end of the tip at the cake side and hold the bag straight up & down, then sweep side to side as wide as you want your ruffle. Finish off with about an inch of a tail at the top to finish the ruffle, then you are able to cover the top with more buttercream in a petal pattern or with fondant.

Not at all! The ruffles were very easy with Wilton Tip # 125 (Leaf tip) and an easy back & forth motion starting from botton to top as wide as you want it to be!
