Share a little about the ingredients and techniques used to create this dish/item. This is Peter Reinhart's recipe from Perfect Pizza at Home. It is the Sicilian Focaccia which uses flour, salt, yeast, water and olive oil and uses the stretch and fold technique to bring the dough together. It then rests overnight before being baked.

I have never been able to produce pizza crusts and focaccia with such flavor until I took Peter's Perfect Pizza at Home class. This is some of the best focaccia I have ever had. It was topped with olive oil, fresh chopped rosemary, kosher salt and fresh ground black pepper. This class took the intimidation out of making pizza dough and made it fun and easy. I virtually always have dough in my refrigerator or freezer now.
