I bought a rolling pin and baking sheet, and here is my second croissant outcome. I think I got a bit impatient and should have let them proof a bit more. I don't think they were quite as light and flaky as the ones I made at Thanksgiving. And then I put them too close together on the baking sheet so they expanded next to each giant connected croissant. HA! so they are not as pretty on the sides as they could be...but they still tasted good!.

Hi gbmko349500, The color is beautiful and the layers look nice too. They don't too underproofed - maybe an additional 5-10 minutes would have made them a bit more voluminous. But great work - and I am sure just delicious! Happy Baking! Colette
