Share a little about the ingredients and techniques used to create this dish/item. I made the corn tortillas using Bob's Red Mill Masa Harina and added a 1/2 teaspoon of beet root powder to give them a pink color. My two preschoolers loved helping me make them and eating them, too!

Very cool! I love beets. Was the flavor pretty mellow? I have been grinding corn to make the masa for our tortillias, and have been thinking about kicking up the flavor with addition of some crumbled bacon, guajillo chili, and a little cilantro. Your spread looks pretty tasty!

You don't taste the beets at all. I use the organic beet root powder for all kinds of stuff- to add color to my homemade flour and now corn tortillas, lip balms, blush, pancakes and even cupcakes. I find that for doughs you need to really add a lot to get the flavor to come out so it's great to use as an all natural food coloring. The crumbled bacon sounds amazing! I will have to try that. I've been planning to add some lime zest to my corn tortillas but not sure if the flavor would show up or get bitter.. hmmmm.

Ha! Love these! Some chefs press whole cilantro leaves or flower petals into the masa. I make my masa verde with pureed jalapenos, cilantro and garlic, and a little oil or pork lard - they look great and the flavor really comes through.
