Key Lime cake, Cream Cheese Icing, Fondant & Gumpaste, Pearl Luster Dust....lots of time!!!

What was your inspiration?

A friend's daughter had her heart set on this cake, she brought me a picture of a similar one, the feathers were flat hearts with gold accents and the the whole cake was covered in fondant. She wanted cream cheese icing for the majority of the cake & we used pearl luster dust instead of gold, but we ruffled the hearts (feathers) to make them more dainty.

What are you most proud of?

(I met the challenge & didn't bail!) When the bride saw it she cried....she absolutely loved it! It made me tear up with pride.

What advice would you give someone starting this project?

Be prepared to spend many hours of prep work. Figure out how you want to design the bird, what size you want, play with fondant and gum paste, get the shape you want, play with colors if you want to add color. We were originally going to add lime green & dark blue luster dust to some of the heart ruffles, but she decided the pearl was more elegant and "wedding like". Use lots of dowel rods to keep it together. I assemble it on the cake stand and then transported it with everything but the head on.

Lovely...lovely.... I have been asked to do a peacock wedding cake as well but I am trying to figure out how to assemble them and as you have mentioned you did assemble the whole cake but left the head to be assembled at the venue....but how did the feathers stay put...especially the bottom part... let me know please :-)
