Your croissants look great. Right away when I see product baking (or rising) unevenly - it is a flag to check the oven. Your oven might have hot and cold spots (most ovens do). I recommend checking your oven with a thermometer.
The uneven baking (or puffing) has nothing to do with your technique as the croissants look great. Nice layers!
I bet they were delicious.
