Instructions

Time consuming but worth it. And I loved learning to make the Cabbage Rose, I have always wondered how the centers were made, now I know. Thanks Maggie, I enjoyed this class very much.

Materials

10" Margarita cake filled with Lime curd, lime mousse with fresh sliced strawberries/ Iced in Italian meringue buttercream. Gumpaste Cabbage Roses, Fondant ruffles.

What was your inspiration?

I too have seen these delicate fondant ruffles and loved them, but most of all I wanted to learn to make the cabbage roses. I was pleased to get both in one video class. Thank you Maggie Austin for a most enjoyable video class. Don't you just love Craftsy.com?

What are you most proud of?

Learning to make the cabbage rose. I had a serious accident 3 months ago and lost the tip of my index finger. I was not sure I would be able to do cakes after that. So lucky and so happy that I can still do what I love to do.

What advice would you give someone starting this project?

Make your roses ahead. Decide on a color pallet before starting your project, color your fondant the day before so nothing slows you down once you start the ruffles. Then just have fun with it.

Thank you Maggie. The cake went over well at lasts nights charity fundraiser, it sold for $150.00 at the live auction. Because I iced it in buttercream I wasn't able to do the upside down version for the frills but it worked out alright.
