What are you most proud of? That after all that work they were at least edible.

What advice would you give someone starting this project? Stick to what you know of your oven. If you know your oven cooks higher/lower than most adjust the settings she gives to work best for you. I didn't do this and I feel my croissants would have been better if I had.
