I was not able to get everything that was recommend for the course so, I had to use what I have on hand. Instead of vegetable rennet I used Junket tablets, it took about 2 hours to set up the curd but it worked.I looked everywhere for distilled vinegar but this was not something I could get right away so I used a 5% apple-honey vinegar instead.
