Instructions

I use Alice Medrich's techniques for melting the chocolate, it works very well. In the past, my chocolate sometime didn't turn out the way I want, it can be frustrating because good chocolate are expensive.

Materials

Three layers of chocolate cake with fresh strawberries and blue berries filled. Cream cheese frosting, Alice Medrich's ganache from Queen of Sheba. Chocolate covered strawberries and more mixed berries for garnish.

What are you most proud of?

Use minimal energy to create the "WOW" effect.

What advice would you give someone starting this project?

Take Alice Medrich course. I know everybody love to learn about cake decorating, but having a good chocolate making skill is very important too. In my restaurant, about 70% of customers prefer chocolate cake for dessert. And I haven't seen a customer refuses a piece of chocolate cake if I bring it in front of them.

My cream cheese frosting is very easy to make. 2 (8 oz) cream cheese, room temp. 1/2 cup butter, room temp. 2 cups sifted confectioners sugar. and 1 tsp vanilla.....In a medium bowl, cream together cream cheese and butter until creamy, slowly stir in the confectioners sugar, add vanilla extract at the end. To make it flawless, I first put the cake in a fridge overnight, then I crumb coat the cake and put it in a freeze for 15 mins and frost the cake again. I hope you'll find this helpful.
