Share a little about the ingredients and techniques used to create this dish/item. I scaled down the recipe from the class so that I could use just eight ounces of butter in the butter block, instead of the twenty called for :) This yielded eight regular sized croissants and from the scraps, nine mini croissants.

What are you most proud of? My husband and I couldn't get away for our anniversary trip this year, but I wanted to make the day special...voila, we started the morning off with freshly baked croissants! With the scraps leftover from making the regular croissants, I was able to make these mini pain au chocolat :)

What advice would you give someone starting this project? Take Colette's class, "Classic Croissants at Home" for excellent tips and techniques to create perfect croissants :)

I was surprised and flattered that one of my Instragram pics was chosen to be included in this blog article on Craftsy.com The funny part is that it wasn't even my favorite pic of the few that I had taken with my iPhone of my batch of homemade pain au chocolat that day, but I am delighted all the same!
