First you start with a rectangle carrot cake. Decide how many pieces you want and then you need 2 pieces per serving. Cut squares out the size you want, 2 per serving.
For the frosting, take Cream Cheese frosting and add maple syrup, of choice, to desired taste. Pipe on one half of Carrot Cake piece. Place 2nd piece on top.
Melt white chocolate and pour into a mold that is miniature designs, as seen in the picture. While they set, drizzle the mini cakes with white chocolate. Top with cooled white chocolate design.
**You can also use dark chocolate instead of white.
