What advice would you give someone starting this project?

If you cook these on two levels of the oven they won't be the same temperature, so one will have to stay in slightly longer. Also, try to get the dough cuts close to the same size so they cook evenly.

I have cooked and baked for years, but any bread I've made has been mediocre prior to starting this course. I have Peter's book, but seeing it done in the video helped me get the consistency of the dough correct (my flour is dry, so I needed more water). Peter talks about this in the video.
