Share a little about the materials, processes and techniques used to create this cake: A mad hatter tea party cake for a fun teenage girl's birthday. This upside down top hat cake was made with red velvet cake, with a cream cheese frosting (mixed with cream) filling and covered in fondant and fondant strips. The top lip of the hat is made using a board for stability and the rest of the cake was carved. The hat has a variety of sweets and treats popping out of the top! The left over trimmings from carving the cake were used to make cake pops for extra fun and decoration.

What are you most proud of? I am proud of carving and structuring a cake for the first time! I am also proud of being asked to do the cake at 8pm the night before the birthday lunch - that was a late night!

What advice would you give someone starting this project? Patience and precision. As this cake is quite big and needs a lot of time for decorating, I would advise returning it to the freezer on any signs of tear or buckling. If the frosting become soft, this can lead to disasters.
