If you like a certain horse breed like e.g. Lippizaner, you could knit all horses in this color.Carry the unused color loosely with you otherwise it will get too tight!
To get short strands inside, just cross the unused yarn over the yarn in use when going over more than 3 to 4 stitches. Do this at alternating positions in every round otherwise the strands will show through.
