9 ounces water - lukewarm 2 teaspoons instant yeast 1/4 cup dry milk powder 1# Bread Flour - used King Arthur Bread Flour - plus a little extra for your work surface 1 Tablespoon sugar 2 Tablespoons softened butter 1 1/2 teaspoons salt Oven: 350 degrees Standard 1# loaf pan, buttered very well 1.) Combine the water, yeast, dry milk powder. The dry milk powder may clump a little - that's ok. 2.) Add flour, sugar, butter and salt and mix until the dough clears the side of the bowl. Use a dough whisk if you have one or a mixer with the dough hook attachment. 3.) Knead for 5-6 minutes until smooth and resilient - throw down a little more flour if your dough is sticky. 4.) Place in a buttered bowl and let sit in a warm spot or in your proofing bag with a mug of hot water until it is doubled in volume. 5.) Gently push the gas out of the dough - flatten it into a rectangle shape, no longer, then your loaf pan. 6.) Roll up jelly roll style and tuck in the ends, place the dough in the buttered pan. 7.) Let rise until the dough is 1/2 inch above the top of the pan, covered gently in a warm place or in your proofing bag with a mug of hot water. 8) Brush with melted butter and cut down the center of the loaf with a serrated knife or a lame. 9.) Bake at 350 for 35 minutes. 10) Using oven mitts, remove bread from pan and put back in the oven for 5 more minutes. This gives a little color to the sides. 11.)
