Share a little about the ingredients and techniques used to create this dish/item. My Oatmeal Cookies with Dried Cranberries and White Chocolate Drizzle, is an adaptation of a classic favorite, updated with dried cranberries and white chocolate. These are NOT your Granny?s Oatmeal cookies! While Granny stuck with raisins, I have given these timeless cookies a facelift with tangy, chewy, cranberries and topped the cookie off with melted white chocolate. These changes turn the ordinary into the gourmet treat. My oatmeal cookies don?t require any obscure flours or flour mixes either, just oatmeal and plain old corn starch, making them economical as well as delicious! My family follows a gluten free diet, and by using certified gluten free oatmeal, these cookies are also gluten free. For a different treat, you can also substitute dried cherries for the cranberries, and the results are just as spectacular. The recipe is available on my blog: Gluten Free Living by Pepperchick http://glutenfreepepperchick.com/2013/12/06/oatmeal-cookies-with-dried-cranberries-and-white-chocolate-drizzle-the-6th-day-of-christmas-cookies/

What are you most proud of? Being able to convert my favorite recipes into gluten free versions with no loss of flavor or texture.

What advice would you give someone starting this project? Always use the best quality ingredients that you can afford. The end taste is a direct result of the ingredients that you use.
