I used Peter Reinhart's procedure - using the premixed Bob's Red Mill gluten free mix along with the yeast, sugar, liquids, and 1 tsp. xanthan gum. Mixture about doubled in size after an hour and was far thicker than Peter's. I probably could have made five 9" pizzas instead of three.
